Fudge Cake

Another one my sister recovered from our grandmother's eclectic mess of recipes and whatnot. Not a very fancy effort, this. But, then again, why should it be?

Ingredients
  • 1 stick butter
  • 2 eggs
  • 1 cup sugar
  • 1/4 package Bakers’s Bitter Chocolate
  • 1 cup pecans, chopped
  • 1/2 cup flour
  • 1 tsp pure vanilla

Instructions

Preheat the oven to 350 degrees.

Melt butter and chocolate together in a double boiler.

In a large mixing bowl, combine the eggs and sugar together in a bowl until uniform and the sugar is almost dissolved. Add the butter/chocolate mix and stir until uniform.

Combine the flour and chopped pecans then add in increments to the mixture. Add the vanilla and continue to stir until all the ingredients are uniform in the mixture.

Line an oblong Pyrex pan with wax paper and then pour the mixture in. Cook for 20 minutes in the preheated oven.

Remove and place on a cake dish until cool.
