Cooked Beans
Ingredients
Instructions Put the beans in a large pot of water to soak overnight. Fry the bacon and pork fat in the oil. Remove when crisp and set aside. Keep the heat on medium and add the onion. Cook until softened, 5 to 8 minutes. Add the garic, chili paste and tomato. Cook for a few minutes until completely warmed. Add the bacon, pork, beans and water/stock. Turn up heat until the mixture approaches a boil. Add the cumin and oregano then reduce the heat and cook until the beans begin to break down, at least one hour. |
